The dinner sandwichesthey are born as a traditional food of Lent and, in particular, of Holy Thursday. Their origins go back to the Last Supper of Christ and the bread broken on the table for the apostles, even if for some years now the dinner sandwiches have been found all year round inbakeries of the City of the Strait.
To celebrate theEastermore pompously, tradition has it that normal bread was enriched with eggs, lard, butter, sugar and above all spices. In fact, inside there are cinnamon and cloves, which give these sandwiches a unique and unmistakable aroma and taste.
Here is the recipe (for which we thank the very kind spouses Donato): to prepare about 20 dinner rolls you need the following ingredients:
- 750 g of 00 flour
- 90 g of lard
- 150 g of sugar
- 45 g of yeast
- 350 g of water
- 11 g of salt
- 5 drops of clove essence
- 1 level teaspoon of cinnamon
- 1 teaspoon of nutmeg
- 1 egg yolk and a little milk to brush sesame seeds
Combine water, lard, sugar and yeast (if using the Thermomix, 2 minutes 50° speed 1 in the mixer). Mix everything adding the flour, herbs and salt (with the Thermomix 3 minutes ear speed). Beat the dough three times on the table and place it in a container covered with cling film to leave it to rise for about two hours.
Then form the balls of about 70 g and arrange them in the pan lined with baking paper and let them rise until they double in size (about 2 hours). Finally, brush with the yolk beaten with a little milk, put the seeds, and bake in the oven with static heat at 220° for about 15 minutes.
