Ingredients for the cream
- Milk: 200 g
- The peel of: 1 lemon
- Cream: 50 g
- Rum: 1 tsp
- Sugar: 90 g
- Vanillin: 1 sachet
- Yolks: 2
- Whipped cream: 150 g
- Corn starch: 40 g
- Vanillin in sheets: 4 g
- Butter: 25 g
- Put the 200 g of milk plus the 50 g of cream with the lemon zest and vanilla in a saucepan and put on the heat. In a small bowl put the egg yolks with the sugar and mix vigorously.
- Add the sifted starch and a little of the milk with the cream put to heat (just enough to make the mixture fluid). Soak the gelatin in water. When milk and cream come to a boil (remove the lemon peel), add the egg mixture and mix with a whisk.
- Once thickened, remove from heat and add the rum, gelatin and melt well. Pour the cream into a pan and spatulate until it cools, at this point add the butter and continue to spatulate until completely absorbed. Pour everything into a bowl and keep in the fridge. Once cool, add the whipped cream, mixing from the bottom up. Leave aside in the fridge.
